Mexican food has a reputation for being spicy, but it has a wide range of flavors and while many spices are used for cooking, not all are spicy. Many dishes also have subtle flavors, loved for their flavors and not just their heat.
A lot of the components used in Mexican food are not spicy. Beans, corn, rice, tortillas, sauces, herbs, cheese and most vegetables used aren't, as well as plenty of spices. There are many variations of mild tacos, enchiladas, and quesadillas that don't have heat, and if you're making them at home, recipes can be adapted.
