Where did the recipe for this Chipotle Paste come from?

Our founder Fergus, travelled to Mexico in 2012. Whilst he was there he went to the southern town of Oaxaca where smoked chipotle chillies are used in lots of local recipes. Fergus fell in love with this unique flavour and set about creating Gran Luchito's Chipotle paste. The recipe development took him six months as he worked with local Oaxacan Chefs, Mexican American Chef Susana Trilling and New York food blogger Alex. Hopefully you'll agree that the hard work paid off!

Is The Chipotle Paste GMO Free

To make the paste we fry a secret blend of chillies using Safflower Oil. This oil is a flavourless vegetable similar to corn or sunflower oil. The reason we use this oil is that its plentiful in Mexico and certified GMO free. So yes our Chipotle Paste is GMO-Free!

For best before date, please see side of lid or base of jar. Gran Luchito Chipotle Paste is made without using preservatives or nasties. Once opened, please refrigerate and use within 6 weeks.

Chintextle - The Amazing Paste That Inspired Gran Luchito

Chintextle – The Inspiration For Our Chipotle Paste

Gran Luchito’s Chipotle Paste was inspired by our founder Fergus’ trip to Oaxaca Mexico where he discovered the amazing Chintextle. A smoked chilli cooking paste that has been used for generations by the indigenous people of southern Mexico.

Traditionally Chintextle was made by the Mixes people by milling the wonderfully rich Pasilla Oaxaca Chilli in a metate (a rectangular volcanic rock used as a grinder) with aromatic herbs, seeds, dried shrimp and garlic into a smooth paste. This paste was originally created to extract and preserve the deep flavours of the smoked chilli which can be naturally volatile.

Fergus fell in love with this unique flavour and set about creating Gran Luchito’s Chipotle Paste. The recipe development took him six months as he worked with local Oaxacan chefs, Mexican American chef Susana Trilling and New York food blogger Alex.

To preserve the authentic recipe and traditional cooking techniques, our Chipotle Paste is handmade in Mexico City. It is made from a secret blend of Chipotle peppers (smoked and dried jalapeño chillies) and rare Mexican chillies. The taste begins with smokiness from the chillies, then sweetness from the caramelised onion, and finally the heat kicks in.
