People start getting excited about using their slow cookers again when autumn approaches, as there is something so comforting about warm and succulent healthy Mexican slow cooker recipes to beat the winter chill. Everything you need to make delicious Mexican slow cooker recipes at home

Creating healthy Mexican slow cooker recipes at home couldn’t be easier with Gran Luchito!

Our Chipotle Paste and some Soft Taco Wraps are a must for most of our slow cooker recipes. The meat will then be infused with the sensationally smoky flavour of Gran Luchito, and you can then stuff it into your warmed wrap and the rest is history.

If you are doing fajitas, then some Red Fajita Simmer Sauce, or Tinga Taco Simmer Sauce would work well in the slow cooker.

We’d also recommend some Hot Habanero Mango Salsa to dollop into your wraps with the meat, or some Crunchy Salsa Macha

What to serve with your slow cooked meat?

A couple of great ideas that you can use as taco garnishes to accompany your slow cooker meat are:

A quick red cabbage pickle is especially good when teamed with our Slow Cooker Pulled Pork. We make it using red cabbage, red onion, red chilli, lime juice, olive oil and Gran Luchito Smoky Chipotle Fajita and Taco Mix.

A simple fresh herb garnish would go extremely well with either our Slow Cooker Barbacoa Beef or Slow Cooked Lamb recipe. A handful of coriander, finely sliced white onion, sliced green chillies (optional), lime juice and some Gran Luchito Crunchy Salsa Macha.

Or another idea, if you are doing a slow cooked lamb recipe such as Lamb Barbacoa Tacos, is to finely chop red onion, mint and coriander. Sprinkle this into your Soft Taco Wraps along with the tender pulled lamb.

Can I leave slow cooker on for 24 hours?

Ideally 6-8 hours is the best amount of time for a long slow cook. However, if you leave for work at 7am, and get stuck and don't get back home until 10pm it will be absolutely fine, they are designed for this! However, we wouldn't recommend leaving it on for 24 hours, as it's not needed.

What can you not cook in the slow cooker?

Stay away from putting dairy in the slow cooker, as it will just curdle. Also, couscous, rice, and pasta will just go mushy. Best avoided!

When is it good to use a slow cooker for Mexican food?

It's good for when you don't have much time, but need to produce something at the end of the day! It takes less than 5 mins to add everything you will need into the slow cooker in the morning, and by the evening you have a gorgeous smelling, tender, melt in your mouth dish.

What Mexican food can you make in a slow cooker?

Slow cookers can be used to make Mexican slow cooked meat mainly. Pork Carnitas or pulled pork, slow cooked lamb or beef, slow cooked chicken. These can then all either be eaten inside soft flour or hard shell tacos, burritos, loaded onto nachos, or served on a simple bed of rice. A simple garnish of slaw, onions, coriander and lime juice perfect the dish!
