- Take the lamb out of the fridge 30 minutes before you cook it, to allow it to come to room temperature. Season generously with salt and pepper.
- Add oil to a large frying pan and brown the lamb on all sides.
- Then place the onions in the bottom of the slow cooker and the seared lamb on top. Add the ground coriander, cumin, garlic cloves, apple cider vinegar, stock, Chipotle Paste and slow cook on high mode for 6 hours.
- Turn every 2 hours, until the meat is falling apart and you are able to remove the bone clean.
- Serve with warm Soft Taco Wraps and Hot Habanero Mango Salsa. Garnish your tacos with a bit of raw diced onion and fresh coriander, then add a squeeze of lime juice and enjoy!
