Our founder Fergus, travelled to Mexico in 2012. Whilst he was there he went to the southern town of Oaxaca where smoked chipotle chillies are used in lots of local recipes. Fergus fell in love with this unique flavour and set about creating Gran Luchito's Chipotle paste. The recipe development took him six months as he worked with local Oaxacan Chefs, Mexican American Chef Susana Trilling and New York food blogger Alex. Hopefully you'll agree that the hard work paid off!

To make the paste we fry a secret blend of chillies using Safflower Oil. This oil is a flavourless vegetable similar to corn or sunflower oil. The reason we use this oil is that its plentiful in Mexico and certified GMO free. So yes our Chipotle Paste is GMO-Free!

A Chipoltle is a smoked Mexican chilli. It has a medium heat and a signature smoky flavour. Chipotle Chillis are made by smoking red Jalapeños over a fire until they are shrivelled and prune-like. This was traditionally done by farmers to preserve the jalapaño crop for the year ahead.
