Our Favourite Leftover Pulled Pork Recipes
Here are our 3 favourite ways of using up leftover pulled pork, the next day:
- These Pulled Pork Tacos are a really simple way to use up leftover pulled pork (using our deliciously smoky Chipotle Paste). This delicious taco recipe also comes with a quick red cabbage pickle. A dollop of our Chipotle Mayo, some fresh green salad leaves, and a squeeze of lime finish them off perfectly.
- Some delicious Pulled Pork Nachos are a great excuse to make nachos and sit in front of the TV one night! Paired with Chipotle Tortilla Chips and our Hot Habanero Mango Salsa, you can’t go wrong.
- Make yourself a Pulled Pork Burrito the next day! This has to be our favourite burrito of all time. If you love burrito fillings (with rice, cheese and beans) but want something lighter without the wraps, then try our Pulled Pork Burrito Bowl.

Both carnitas and pulled pork are slow-cooked for hours. However, carnitas are finished off by being roasted in the oven until crispy and brown.
So long as you choose pastured pork where pigs are fed a natural diet and allowed to roam and root, then their pork belly is very healthy, rich in vitamins and minerals. The fat is also 50% monounsaturated (good fats), and the rest is saturated and polyunsaturated, which is actually also healthy. It’s just that we consume far too much of those fats! So pork belly is very healthy, but just don’t eat it all the time.
With our pulled pork tacos recipe, we serve it with a quick red cabbage slaw. Other ideas are our Mexican Black Beans and Mexican coleslaw recipes, along with Gran Luchito Soft Taco Wraps and Chipotle Mayo.
You can make all sorts of burritos, tacos, quesadillas, fajitas, nachos or enchiladas. You can make pork pibil, pork in salsa verde, pulled pork, or sticky pork belly, and these are all then filled into classic Mexican vessels like soft flour tortillas.
Pork is made Mexican in the way it’s cooked and presented. Traditional herbs and spices are used, red peppers, tomatoes, onion, quite often chillies, a bit of smoky heat. It’s then roasted, fried or slow cooked and typically presented with rice, or in soft flour or hard corn tortillas.
