Is lamb popular in Mexican cuisine?

Yes, barbacoa is a very popular and traditional dish in Mexico typically made with a whole lamb often for special occasions. The lamb is slow roasted in a pit made in the ground for many hours until tender.

How do you cook Mexican lamb so it's tender?

We think the key to tender lamb is slow roasting it and making sure you add liquid in the bottom of pan or slow cooker. We like to use stout in our cooking liquid!

Why is my Mexican lamb tough?

Most likely, depending on the cut, it needs to cook longer. It is common that the meat will seem quite tough after cooking for a while. Don't worry, keep on roasting and it will turn tender unless you are cooking a cut such as lamb chops which should be cooked to medium rare.

Do you rest lamb before serving?

Yes, we recommend resting the meat for 10 minutes so the meat's juices can redistribute before carving.
