Top tips when making fajita platter at home:

  • Sear your meat. To achieve the delicious charred exterior characteristic of fajitas, this will also help to seal in the juices and add flavour.
  • Season properly. Part of what makes fajitas so delicious is the combination of spices and herbs used to add flavour and colour to your meat. This and a squeeze of lime juice on top, salt and pepper are all you need for perfectly delicious fajitas.

How to make it

  1. Season your steak with the ancho BBQ and salt on both sides, drizzle with 1 tbsp of olive oil and rub it on the meat surface, distributing the spice mix evenly.
  2. Heat a large skillet over medium-high heat with another tbsp of olive oil. Once the pan is hot enough, place the large steak onto the pan and cook for 3 and a half min on each side, until it gets nice colouring all around, for the medium term. Cook the thinner sirloin and the beef filet, 2 minutes on each side, approx. for medium-term or cook to your liking. Once ready remove the steaks from the heat and let them rest for 6 minutes before cutting.
  3. In the meantime in the same pan and while it is still hot add the remaining olive oil and the peppers with the onion, and fry until the vegetables get slightly charred. Season with salt and pepper. When ready, remove from the heat.
  4. Slice your steak into thin strips. Heat the Refried Beans in a small saucepan, add 1/2 a cup of water and stir. Warm up the fajita wraps over a hot pan and get ready to serve.
  5. Place the steak strips and grilled vegetables over a nice platter or board, arrange nicely and serve alongside the warm beans on the side, chipotle salsa, lime wedges, warm fajita wraps, coriander scattered on top and cherry tomatoes on the side. Serve all together for everyone to build their tacos.
