For these, why not make a fresh batch of Cheese Empanadas, or our Quick Queso with Cauliflower. The empanadas can easily be made ahead and frozen. They can then be baked straight from frozen.
If you want to go completely authentic, a lovely warm drink of Mexican Caramel Atole or Ponche Navideño (fruit punch) alongside a typical pudding such as Mexican Chocolate Pie or Tres Leches Cake would do the trick.
Boxing Day Recipes for Christmas Leftovers
A great way to use up all of those turkey leftovers is to make a Turkey Burrito for lunch on Boxing Day. Stuff in some of the leftover brussel sprouts, some Gran Luchito Refried Beans, a few dollops of Gran Luchito Chipotle Mayo and some of our Serrano Green Chillies. You can have it hot or cold, and both will taste delicious!

The Mexican celebration of Christmas (as a whole) is called Las Posadas and begins on December 16 and ends on 24th. It commemorates the journey that Joseph and Mary made from Nazareth to Bethlehem in search of a safe refuge where Mary could give birth to the baby Jesus. The ninth evening of Las Posadas is Buena Noche, Christmas Eve.
