We love a good salad at Gran Luchito and we really believe that they never have to be boring. This Mexican Salad recipe is proof of that and it can be served as a perfect Mexican BBQ side dish, with any protein you might be already cooking for your loved ones. It’s fresh, colourful, satisfying and a tiny bit spicy (but just the right amount!). Our Gran Luchito Chipotle Paste has many uses, but it’s also a great ingredient to make dressings, so for this recipe we’ve popped in a spoonful of this to make a quick and spicy dressing.
2. Mexican Corn
First up on our top BBQ Sides is this seriously tasty Mexican corn salad recipe plucked straight from the streets of Mexico City. Known as Esquites in Mexico, we like to call it Mexican Street Corn. The secret ingredient is Gran Luchito Chipotle Mayo. If you prefer your corn on the cob, be sure to check out our recipe for Baked Mexican Elotes as well as BBQ Corn.
Take your coleslaw up a notch with a dressing made with Gran Luchito Chipotle Mayo and zingy lime. This recipe is to die for, and much more flavourful than traditional coleslaw! You’ll never look back.
A classic and simple recipe, that is both nutritious and versatile, black beans and rice would never be out of place at a Mexican table or BBQ! Our Gran Luchito Cantina Beans are perfect for the job, and some of our Smoky Chipotle Fajita & Taco Mix added also brings lovely flavour to the rice.
5. BBQ Corn
Eating barbequed corn on the cob in Mexico is a popular thing! We like to serve it with a good amount of Chipotle Butter prepared with Gran Luchito Chipotle Paste, a squeeze of lime juice, freshly chopped coriander and a sprinkle of Gran Luchito Smoky Chipotle Fajita and Taco Mix on top. Make sure to keep the chipotle butter nearby just in case you need to add some more!
This gorgeous Mexican Bean Salad would be a delight to serve at any BBQ. The recipe is bright, colourful, not to mention healthy as hell and of course tasty too! We’ve combined onions, peppers, sweetcorn, lettuce, coriander, avocados with Gran Luchito black Cantina Beans, and a dressing consisting of olive oil, lime juice, Gran Luchito Chipotle Mayo and Gran Luchito Chipotle Paste!
Is it even a BBQ without Chips and Dips?! Our Guacamole is the perfect addition and couldn’t be easier thanks to the fresh flavour Gran Luchito Tomatillo Salsa adds. Your guests will be asking you what the secret to your guacamole is, trust us!
8. Cowboy Beans
This cowboy beans recipe is how it’s prepared in Mexico, cooked with any delicious meat you can find, bacon, sausage, chorizo, sometimes pork etc. Served like a soup or stew, and simply garnished with finely diced onion, coriander and lime juice. Yum!
9. Wedge Salad
Next on our list of BBQ Sides is this delicious wedge salad which is best served with tender loving care! It combines a beautiful blue cheese dressing, taken to the next level with Gran Luchito Chipotle Paste and crispy bacon, diced tomatoes and onion.
With a dollop of Gran Luchito Chipotle Mayo in the dressing, in addition to sour cream, cheese and lime juice, these Elotes are certainly completely moreish smothered in it!
11. Pico de Gallo
Next up is a classic Pico de Gallo bursting with freshness and a hint of smoke from Gran Luchito Chipotle Fajita & Taco Mix. Always look for the freshest and best quality tomatoes for this recipe, as it will make a difference in the end result of the dish!
Finally, a showstopper that’s quick and easy to make and perfect for the avocado obsessed! The prawns are marinated in Gran Luchito Chipotle Paste and lime zest, and finished with lime juice and coriander for plenty of fresh flavour.
Here’s a fun and delicious way to cook corn for a bbq this summer! The spice mix that is added to the corn forms charred edges on the corn whilst being baked, and regular mayo is stepped up with the help of Gran Luchito’s Crunchy Salsa Macha and a touch of lime.
This is a delicious and fresh fragrant rice recipe that’s the perfect accompaniment to any Mexican BBQ. Gran Luchito Chipotle Lime Paste is used to give it a spicy citrus zing, and chopped coriander and fresh lime finish it off perfectly.
15. Grilled Onions
Make your BBQ even more amazing by adding these grilled onions alongside your meat! Put them on the lower heat part of the grill and let them brown slightly and become tender. We’ve used our Guajillo Fajita & Taco Mix to season them before cooking, but you can use any of our taco mixes for this recipe.
Use this fresh and much loved recipe as a relish to have with your meat and veggies! Chimichurri is always a BBQ must-have, and we’ve made a red version with red peppers and chipotle chillies with our Chipotle Fajita & Taco Mix. For a herby version, use our Habanero spice mix (below).
17. Macha Mayo
Whip up a delicious spicy mayonnaise to have as a side dish with your chicken or fish BBQ recipes. We use our Crunchy Salsa Macha to add heat and a nutty flavour and texture to regular mayo. The more you add the spicier it will be, so start small and build up to your perfect amount of heat.
