Late night snacks made from scratch are always the best because what to eat before bed should ideally be somewhat healthy, right? Our top three favourite bedtime snacks have to be Mexican Scrambled Eggs, Mexican Molletes with Refried Beans (aka homemade grilled cheese on toast), and Queso Fundido (hot melted cheese with crunchy tortilla chips). All so comforting, but also with added nutrition, bingo!

Everything you need to make Late Night Snacks at home

With a little help from Gran Luchito you can bring these healthy bedtime snacks to life!

You’ll need to get yourself some of our Lightly Salted Tortilla Chips for dunking in guacamole or that oozy and melty hot queso dip, as well as our Chipotle Honey for drizzling on top of queso, molletes, popcorn or scrambled eggs!

A packet of our Refried Beans will be handy so that you can spread some over your sourdough toast for molletes, or have alongside scrambled eggs. Some of our Soft Taco Wraps to have with your scrambled eggs will go down a treat, as well as crucial for quesadillas and tacos.
