These mushroom tacos are perfect for a midweek meal, especially for those days when you come back from work and just want to put something together quickly. You can make these Mexican mushroom tacos completely vegan by using Gran Luchito Cantina Beans, instead of leftover rotisserie chicken, and a good chunk of melty vegan cheese. Either way, they will turn out delicious!

For chicken and mushroom tacos, you can make use of the leftover rotisserie chicken in your fridge, or the chicken breast from a previous meal. You then simply warm up the Gran Luchito Tolucan Chilli Mushrooms over a hot pan and stir the shredded chicken into the tasty sauce. Then that’s it, your filling is done! Next up, warm some Gran Luchito Soft Taco Wraps, add grated cheese on top, and once it melts lightly flip your tortilla with the help of a spatula. This will turn that cheese crispy and even more delicious. The soft taco is then topped with the chicken mushroom filling and a fresh garnish. Your dinner is then ready!

How to make it

  1. Heat up a medium size pan over medium heat. Once it’s hot enough, pour in the Tolucan Chilli Mushrooms, and warm them up for a couple of minutes. Add the shredded chicken and combine into the mushroom mixture, then cook for 5 minutes with a lid on.
  2. Warm up the Soft Tacos over a hot non-stick pan, one or two at a time. Add a handful of grated cheese on top and once it melts, lightly flip with a spatula allowing the cheese to crisp up and get toasty and delicious, this only takes a minute. 
  3. Remove the Soft Taco with crispy cheese from the pan and serve it on a plate. Top it with a generous amount of mushroom chicken filling and simply garnish with a bit of the coriander and onion. 
  4. Repeat the same process with the rest of your filling and tortillas, then serve these easy mushroom tacos warm, and enjoy!
