Are you looking for a delicious way to use up leftover roast chicken? Let us introduce you to this easy chicken quesadilla recipe! Quesadillas, if you aren’t already familiar, are made with a tortilla that is filled with cheese and in this case also roast chicken which gets toasted in a hot pan until the cheese is melty and gooey. Chicken quesadillas are perfect for a snack, lunch, light dinner or as nibbles.

What makes this the best chicken quesadilla is our secret ingredient – we place a dollop of our smoky Chipotle Mayo onto the wrap and it makes the quesadilla unbelievably moreish.

We like to serve our chicken quesadillas with a side of our fresh tomato salsa, Pico de Gallo, which is super easy to make and tastes amazing. If you haven’t got time to make it, you could serve it with our Chipotle Salsa instead!

How to make it

  1. Heat a frying pan on a medium heat. Add half of the shredded chicken on top of a Burrito Wrap, then top with the grated cheese and spring onions. Add a few spoonfuls of Chipotle Mayo and cover with another burrito wrap.
  2. Brush your quesadilla with a little olive oil on top and place it over the hot pan over medium heat. Let the cheese melt and get golden brown on both sides.
  3. Repeat the steps to make a second quesadilla, and keep them warm in the oven on a low heat.
  4. Now you can quickly make the guacamole and pico de gallo.
  5. For the pico de gallo: in a bowl add the tomatoes, onion, coriander, lime juice, extra virgin olive oil, Smoky Chipotle Fajita & Taco Mix and a pinch of salt & pepper. Combine everything with a spoon.
  6. For the guacamole: cut the avocado in half and remove the stone. Scoop out the flesh with a spoon and roughly mash in a bowl with a fork. Add the coriander, onion and the lime juice, and then season with salt and pepper. Mix well.
  7. When ready to serve, cut the quesadillas into quarters and serve with the guacamole and pico de gallo.
