Are you looking for a delicious way to use up leftover roast chicken? Let us introduce you to this easy chicken quesadilla recipe! Quesadillas, if you aren’t already familiar, are made with a tortilla that is filled with cheese and in this case also roast chicken which gets toasted in a hot pan until the cheese is melty and gooey. Chicken quesadillas are perfect for a snack, lunch, light dinner or as nibbles.
What makes this the best chicken quesadilla is our secret ingredient – we place a dollop of our smoky Gran Luchito Chipotle Mayo onto the wrap and it makes the quesadilla unbelievably moreish.
We like to serve our chicken quesadillas with a side of our fresh tomato salsa, Pico de Gallo, which is super easy to make and tastes amazing. If you haven’t got time to make it, you could serve it with our Gran Luchito Chipotle Salsa instead!
Make a pico de gallo: In a bowl add the tomatoes, onion, coriander, lime juice, extra virgin olive oil, Smoky Chipotle Fajita & Taco Mix and a pinch of salt & pepper. Combine everything with a spoon.
Prepare a quick guacamole: Cut the avocado in half and remove the stone. Scoop out the flesh with a spoon and roughly mash in a bowl with a fork. Add the coriander, onion and the lime juice, then season with salt and pepper. Mix well.
Make your quesadillas: Add half of the shredded chicken on top of a Burrito Wrap, then top with the grated cheese and spring onions. Add a few spoonfuls of Chipotle Mayo scattered on top and cover with another burrito wrap.
Heat up a pan, brush your quesadilla with a little olive oil and warm it up in the pan, allow the cheese to melt and the wraps to get toasted on both sides. Repeat the steps to make a second quesadilla.
When ready to serve, cut the quesadillas into quarters and serve with the guacamole and pico de gallo.
These quesadillas are great served on a platter for everyone to dig in and help themselves.

If you are simply heating up leftover cooked chicken, you can do this by adding it on top of your burrito wrap inside a heated frying pan, as we do in our recipe. Simply cooking your quesadilla is enough to heat through the chicken, without having to heat it up separately first. If you are cooking chicken breast from scratch, you will need to do this separately beforehand. Chicken breasts can be grilled in the oven and then shredded with a couple of forks.

A large chicken and cheese quesadilla has around 600 calories. Quesadillas have a bad reputation when it comes to healthy eating and dieting, since restaurant versions are usually overflowing with cheese and covered with sour cream. However, quesadillas can be healthy so long as you make smart choices when it comes to the filling.
What to put in a chicken quesadilla?
Apart from the chicken itself, you can add cheese, peppers, onions, jalapenos, refried beans, black beans, corn, coleslaw, pico de gallo, tomatoes and coriander. Dont forget the guacamole and sour cream to serve (optional)!
