The reasons for it becoming a worldwide phenomenon are the following: They are no longer a luxury item and contain 14g of healthy fats per serving, as well as over 20 vitamins and minerals. In this article, we will share with you our favourite healthy and easy Mexican avocado recipes, perfect for Spring and Summer.

Our delicious homemade Guacamole recipe is the mother of all Mexican avocado recipes. It’s packed full of spring onions, lime and fresh coriander, and not to mention a couple of spoonfuls of our Tomatillo Salsa. This is the secret ingredient in order to add all of that zing and tang that makes it the best. Once you try it, there will be no going back!

2. Poached Egg With Avocado Toast

Who could resist this? Our incredibly popular Poached Egg With Avocado Toast takes breakfasts to a whole new level. In terms of Mexican avocado recipes, this one you must try! A beautiful slice of toasted sourdough spread with a generous layer of our Chipotle Mayo, topped with mashed avocado, a poached egg, and a sprinkle of parsley. Buen Provecho!

3. Mexican Salad

We love a good salad at Gran Luchito and we really believe that they never have to be boring. This Mexican Salad recipe is proof of that and it can be served either as a main meal or as a side, with any protein you might be already cooking for your family. It’s perfect for those days when you feel like something a bit lighter, but still tasty, and would like to use that avocado! It’s fresh, colourful, satisfying and a tiny bit spicy (but just the right amount!). Our Chipotle Paste has many uses, but it’s also a great ingredient to make dressings, so for this recipe we’ve popped in a spoonful of this to make a quick and spicy dressing.

BBQ Avocado With Chipotle Prawns is a perfect one for lunch or a great little starter idea. This summery dish is quicker than it looks to make, and the idea of charring the avocado slightly will impress your loved ones. A BBQ spin on the classic avocado prawn cocktail, except the difference being that the prawns are marinated in our Chipotle Paste.

Bacon Avocado Bomb

Heard of a Bacon Avocado Bomb? Well now you have. Not strictly a Mexican Avocado recipe but equally delicious these delightful little balls of joy will have anyone who is presented with one asking how you did it. The trick is to perfectly soft-boil the egg so that it’s nice and gooey and then give the bacon a good glaze of our Chipotle Honey. Have one as a breakfast, a little starter, or simply a snack!
