Preheat your oven to 180°C / 350°F.
- Place your salmon in a baking dish and spread the Chipotle Paste over your fish with the back of a spoon. Add the butter on top, the olive oil, a pinch of salt and freshly ground black pepper. Place in the oven for 16-20 minutes, (depending on your oven).
- While the salmon is cooking, prepare the quick salad garnish by mixing all the ingredients in a bowl. Then simply season with salt and pepper and set aside.
- Prepare the avocado crema by placing all the ingredients into a food processor, and blitz until you get a smooth creamy texture. Season to taste with salt and pepper.
- Warm up the Gran Luchito Soft Taco Wraps over a hot pan and keep them warm, wrapped in a tea towel.
- Once your salmon is cooked, remove from the oven and squeeze the lemon juice on top. Break the meat with a spoon, and serve over your soft tacos. Add a good amount of salad garnish, and finish your taco with a good amount of avocado crema.

Other alternatives you could do would be an avocado salsa, a pico de gallo, or some Mexican coleslaw. They would all go brilliantly inside this fresh summery taco.
