- Heat up a frying pan and add the olive oil. Once it’s hot enough, add the onion and cook until it softens, then add the sweet potato, Chipotle Paste, a pinch of salt and freshly ground pepper.
- Stir and let it cook for a minute or two, then add ½ cup of water and cover your pan with a lid until your sweet potato is cooked through. Once ready, add the butter and let it melt. Finish with the coriander scattered on top, then set aside.
- To make your quesadillas, get your Burrito Wraps and add a good amount of grated mozzarella. Then add the sweet potato and distribute evenly. Add a spoonful of Cantina Beans, and finish with more cheese, folding your quesadillas in half.
- Heat a non-stick griddle pan and brush the surface with olive oil. Once hot enough, place your quesadillas in the pan and let them get toasted and golden brown on both sides, with the cheese melting inside.
- Remove once ready and cut in half. Serve with a good amount of Chipotle Salsa.Â
