Everybody loves a toasty melted quesadilla and this Sweet Potato Quesadilla recipe is especially delicious! This time, we’ve made them with sweet potato cooked with Gran Luchito Chipotle Paste and a bit of butter.
Cooked very simply but with tons of flavour, here’s a speedy snack that you can prepare for you and your family! A good tip is to add Gran Luchito Cantina Beans – it makes them even tastier.
Feel free to duplicate or triplicate this sweet potato quesadilla recipe, and don’t forget to serve with Gran Luchito Tomatillo Salsa or Gran Luchito Chipotle Salsa; they will make your quesadillas taste amazing.

- Heat up a frying pan and add the olive oil. Once it’s hot enough, add the onion and cook until it softens, then add the sweet potato, Chipotle Paste, a pinch of salt and freshly ground pepper.
- Stir and let it cook for a minute or two, then add ½ cup of water and cover your pan with a lid until your sweet potato is cooked through. Once ready, add the butter and let it melt. Finish with the coriander scattered on top, then set aside.
- To make your quesadillas, get your Burrito Wraps and add a good amount of grated mozzarella. Then add the sweet potato and distribute evenly. Add a spoonful of Cantina Beans, and finish with more cheese, folding your quesadillas in half.
- Heat up a non-stick griddle pan and brush the surface with olive oil. Once hot enough, place your quesadillas in the pan and let them get toasted and golden brown on both sides, with the cheese melting inside.
- Remove once ready and cut in half. Serve with a good amount of Chipotle Salsa.Â
