Authentic Cactus Salad

Cactus (also know as Nopales) is a kitchen staple in authentic Mexican cooking. You will find it in every kitchen, taqueria and restaurant across Mexico. Cactus is used to top just about everything from quesadillas, tacos and tostadas to even scrambled eggs. Our favourite way to eat cactus though has to be the fresh, authentic cactus salads you will find on the streets in Mexico.

In our version the Authentic Cactus Salad is wrapped up in warmed Gran Luchito Soft Taco wraps and topped with our Gran Luchito Jalapeño and Pineapple for a fresh burst of flavour.

We recommend serving our Authentic Cactus Salad as a fresh and light starter with Vegetarian Quesadillas which are stuffed with our smoky chipotle Gran Luchito Refried Beans as the main or keep with the street food theme and serve with Chipotle Chicken Tacos.

How to make it

  1. Dice tomatoes and spring onions. Roughly tear the coriander leaves.
  2. In a large bowl, add the lime juice and 1 tablespoon of Gran Luchito Sliced Mexican Green Cactus liquid. Also add a splash of olive oil, 1 teaspoon of dried oregano and a pinch of salt & pepper. Mix well to create a dressing. Adjust to taste.
  3. When ready to serve, add the chopped vegetables & coriander and mix well. 
  4. Sprinkle over a handful of Gran Luchito Gran Luchito Jalapeño and Pineapple and serve with Gran Luchito Soft Taco Wraps.
