For the slow cooking stage:
  • 11IB 2 Oz Pork belly
  • 2 Cups Chicken/vegetable stock
  • 4cm Piece of ginger
  • 2 Garlic cloves
  • ½tbsp Sugar
  • ½tbsp White wine vinegar
  • Salt
  • Pepper
For the glaze
For the rest
  • 7 oz Rice (we used Thai jasmine)
  • Stock (from slow cooking pork belly)
  • Water (if not enough stock)
  • 2 Scallions
  • Handful toasted sesame seeds (optional)

Instructions Instructions

  1. Begin by cutting the pork belly into bitesized chunks.
  2. Place in slow cooker (or sauce pan) with grated ginger, crushed garlic, sugar, white wine vinegar, stock and a good pinch of salt & pepper.
  3. Mix and cook as low as possible for 2 to 3 hours, or until the pork belly is very tender (try a bit).
  4. Remove pork belly pieces and retain the liquid.
  5. Cook the rice in a saucepan with a lid. Use the cooking liquid (topped up with water if you don't have enough). Use twice the volume of liquid to rice. Bring to the boil and simmer until liquid has gone.
  6. Get a wok nice and hot with a little vegetable oil.
  7. Add the pork pieces and leave to crisp up (it will spit a lot, so use a shield or a lid). Once crispy, carefully flip them over so they are crispy all over.
  8. In a bowl, mix the Gran Luchito Smoked Chilli Honey, soy sauce, grated ginger, salt & pepper.
  9. Add to the pork and cook (at a lower heat) until it all goes sticky.
  10. Sprinkle with toasted sesame seeds and serve with rice.
  11. Top with chopped spring onions.
