Brussels sprouts have long been a favourite vegetable to cook and serve during the holidays, and when cooked with Mexican flavours the result is even more delicious than you first anticipated.
Is a simple but very flavorful recipe that we think would be a success as part of your holiday menu, it’s all about achieving deliciously pan-fried brussels sprouts with charred edges but not overcooked, combined with red onions and crispy bacon, seasoned with Ancho BBQ Fajita & Taco Mix and a bit of tangerine juice for a citrus touch. Our Mexican brussels sprouts are accompanied by a delicious dressing prepared with Gran Luchito Chipotle Paste for an incredibly smoky and spicy taste.

How to make it
- Heat up the olive oil in a frying pan over medium heat, once hot enough add the bacon and stir, fry the bacon for 5 mins, then add the onion and Ancho BBQ Fajita & Taco Mix, and keep cooking for a couple of minutes until the onion gets translucent, then remove with a slotted spoon the crispy bacon and onions from the pan and reserve in a bowl on the side.
- Add the butter into the same pan and once it melts and begins to bubble add the Brussels sprouts, cook over medium heat and cover the pan with a lid for 5-6 minutes. Then return the crispy bacon and onions to the pan with the Brussels sprouts and stir them in, add the juice of the mandarin and the lemon zest, season with salt and pepper, stir and cook for a couple more minutes.
- In the meantime in a bowl combine the creme fraiche, with the rosemary, chipotle paste, extra virgin olive oil and a squeeze of lemon juice, season with salt and pepper and stir until all the ingredients are combined into a smooth dressing, and reserve.
- Remove the Brussels sprouts from the heat and serve with the chipotle dressing drizzled on top, serve alongside your favourite Christmas main.
