How to make it
- Prep carrots. If using Chantenay, simply wash and leave whole. If using larger ones, peel and chop..
- Place in roasting tray with olive oil, Gran Luchito Chipolte Honey, salt & pepper.
- Mix well and roast at 180C for 15 to 20 minutes.
- Remove from oven and roughly chop coriander. Stir through roasted carrots.
