Ingredients Ingredients

  • 2 Avocados (ripe but not too soft)
  • 12 Large shrimp (we used raw but you could use pre-cooked ones)
  • 2 Limes
  • 1tbsp Gran Luchito Smoked Chilli Pickle
  • Handful fresh cilantro
  • 1tbsp Olive oil
  • Salt
  • Pepper

Instructions Instructions

  1. Place shrimp in a bowl and add Gran Luchito Smoked Chilli Pickle. Stir until well combined.
  2. Leave in the fridge for about an hour (or as long as you have).
  3. Meanwhile, cut avocados in half lengthways and remove stones.
  4. Get a grill pan very hot.
  5. In a bowl, mix olive oil, juice from 1 lime and a good pinch of salt & pepper. Use a brush to cover the flesh of each avocado half with mixture.
  6. Place the avocado halves onto the grill pan and cook for about 4-5 mins. Try not to move them around whilst they cook as you won't get the nice clear char marks.
  7. Remove with a metal spatular, trying to avoid removing the charred bits if it sticks.
  8. Quickly pan fry the shrimp with a little olive oil (3 or 4 mins).
  9. Place on a plate and top with the shrimp, the cooking sauce, a squeeze of lime juice and some chopped coriander.
  10. Serve with more lime wedges.
