  • 2¼lb Potatoes
  • 1¼ Cup Double cream
  • ¾ cup Full fat milk
  • 1tsp Gran Luchito Smoked Chilli Paste
  • 2oz Butter
  • Olive oil
  • 2 Cloves garlic
  • 2 Shallots
  • 2tsp Chopped thyme leaves (or used dried)
  • 2 Bay leaves
  • 1 Chicken bouillon
  • 5oz Parmesan (keep the rind)
  • 2 Scallions
  • Salt
  • Pepper

Instructions Instructions

  1. Pre-heat oven to 400F.
  2. Slice shallots into rings and fry with finely chopped garlic, butter, a lug of olive oil, 2 bay leaves, chopped thyme leaves & Gran Luchito Smoked Chilli Paste for 15 mins on low heat, stirring occasionally.
  3. Meanwhile, peel and slice potatoes into discs approximately 3mm thick.
  4. Add full fat milk & double cream, as well as the rind from the parmesan if you have it (unlike other cheeses, parmesan 'rind' is exactly the same as the rest, it's just dried out). This will impart a lovely rich flavour.
  5. Dissolve the bouillon cube in a very small amount of boiling water and stir into the mix.
  6. Bring to a boil then simmer for a few mins. Remove parmesan rind and bay leaves and add about ¼ of the grated parmesan.
  7. Add potatoes and mix well.
  8. Pour into buttered oven dish, sprinkle over remaining parmesan and chopped scallions, cover with oiled foil and place in oven.
  9. Bake for 1 hour then remove foil and continue to cook until top is golden and crispy. For extra crispiness, finish under the broiler. Serve with roast chicken, or other meat, fish etc.
