Our Chipotle Sauce does all the heavy lifting in this recipe, working as a marinade and a sticky barbecue glaze. The smoky chipotle chillies team up with sweet pineapple for a blend that refuses to behave with its fruity, fiery heat cutting straight through the richness of the salty halloumi.
For the main event, expect sticky, crispy halloumi that stays beautifully soft in the centre. Tuck the grilled halloumi into a warm soft taco wrap, layer up with our avocado and lime sauce for a cooling contrast, and finish with quick-pickled red onion, fresh coriander, and a squeeze of lime.

Prep the cheese: Cut your halloumi into even fingers.
Marinade: Toss the halloumi fingers in a bowl with a generous coating of our Chipotle Sauce, ensuring every piece is well covered. Leave them in the fridge to marinate for at least 10 minutes.
Grill: Use tongs to transfer the halloumi to the barbecue grill. If you want extra intensity, brush on any remaining sauce from the bowl as they cook. BBQ until the cheese is soft, golden, and caramelised.
Warm the tortillas: Flash the Soft Taco Wraps on the barbecue to warm them through, about 10-15 seconds on each side.
Assemble: Remove the halloumi from the grill and build your tacos. We highly recommend layering yours with our Avocado & Lime Sauce, pickled onions, and fresh coriander.
