How to make it

  • Sear the meat: Brown the beef in a baking tray directly on the hot BBQ.

  • Go low and slow: Remove the tray from the heat, add the contents of the birria taco recipe kit, and cover tightly with foil, or transfer everything to a heavy, cast-iron casserole dish. Cook low and slow on the BBQ until the meat is completely tender.

  • Shred and prep the broth: Shred the beef directly in the cooking liquid, then pour off and reserve the excess to use as your dipping broth.

  • Build the tacos: Dip the corn tortillas into the reserved broth, place them onto the BBQ, and fill with the shredded beef and grated mozzarella.

  • Crisp and melt: Toast the tacos on the BBQ until the tortillas are golden and the cheese is completely molten.

  • Serve: Finish with finely diced onion, fresh coriander, and a squeeze of lime. Serve immediately with a bowl of the warm broth on the side for dipping.
