Al Pastor Tacos are Mexico City’s most famous tacos. Al Pastor was influenced by Lebanese immigrants who brought their unique spit-grilled style of cooking flavourful, marinated meat to Mexico. Al Pastor’s sweet and tangy flavour is layered with Mexican chillies and spices, pineapple, vinegar and achiote paste which provides Al Pastor’s unique, bright orange colour.

Typically pork shoulder or pork loin works best for al pastor-style. Some kits may allow or suggest chicken or even tofu if you prefer lighter or non-pork.
It varies. Al pastor is usually mild to medium spicy, with a balance of sweet, smokey, and tangy.
