Easy Steak Birria Tacos

Originally from Jalisco, Birria is typically a Mexican dish of slow-cooked, stewed meat in broth. How to make it

  1. Heat up a pan over high heat with a drizzle of vegetable oil.
  2. When hot, add the steak, stir and fry for 3 minutes.
  3. Add the spice blend, cook for another 2 minutes to release the aromatics.
  4. Add the smaller base flavour sachet and cook for a further 2 – 3 more minutes and stir
  5. Stir in the larger main sauce sachet, reduce the heat and cover with a lid for 7 minute
  6. Warm the Gran Luchito Soft Tacos or Gran Luchito Corn Tortillas according to package directions. Fill each taco with the steak birria and garnish generously with chopped coriander and a squeeze of fresh lime juice. Serve immediately.

What is steak birria?

Birria is traditionally a richly spiced Mexican stew made with goat or beef braised in a chile-based sauce (and served with a consommé). Steak birria means using a steak or beef cut (rather than goat or lamb) as the protein for that birria flavour profile.

What cut of beef/steak should I use?

Ideally, cuts with some connective tissue or fat for flavour in the braise. Many birria recipes use beef chuck roast or similar. If you use a thinner or leaner steak, you risk the meat becoming tough or over-done when cooked

How do I cook it / how long?

Traditional birria uses slow braised for several hours until meat is fall-apart tender.
Typically, marinate steak, sear/stamp flavour, cook in sauce/consommé until desired doneness, then shred or slice. Then you may crisp in tortilla as birria tacos (quesabirria style) with dipping consommé. This recipe does not require several hours of cooking and is a quick and easy option.
