This week we’re putting a spicy twist on a beloved classic with a Mexican Shepherd’s Pie! Instead of the traditional British version, we’ve swapped the standard lamb or beef filling for a delicious mix of seasoned ground beef, black beans, corn, and fiery chiles. The topping is a smooth and creamy mash made with Yukon Gold potatoes, butter, and a hint of lime for a citrusy kick. This comforting dish combines bold flavours and familiar textures for a crowd-pleasing dinner. Serve with our Fideo Soup and Mexican Green Beans.
