Ingredients
- 1 teaspoon Gran Luchito Chipotle Chilli Honey
- 1 tablespoon white wine vinegar
- 1 tablespoon extra virgin olive oil
- 8 medium tomatoes, sliced
- 50g / 2oz goats’ cheese
- A handful of basil leaves
- Salt and freshly ground black pepper
How to make it
- Whisk the Gran Luchito chipotle chilli honey, white wine vinegar, olive oil and a pinch of salt and pepper together in a bowl.
- Combine the tomatoes with the dressing and leave for 30 minutes.
- Scoop off chunks of the goats’ cheese and scatter over tomatoes.
- Tear the basil leaves over the top and sprinkle with salt and pepper to taste.
