What cut of meat is best for Al Pastor?

Typically pork shoulder or pork loin works best for al pastor-style. Some kits may allow or suggest chicken or even tofu if you prefer lighter or non-pork.

It varies. Al pastor is usually mild to medium spicy, with a balance of sweet, smokey, and tangy.

What makes al pastor authentic?

The origin of this recipe makes it unique. The method of roasting meat on a vertical spit (trompo) in Mexico City came from Lebanese immigrants.
