How to make it

  1. Poach the chicken–  Place the chicken in a saucepan, cover with cold water, bring to a boil, then immediately reduce to a gentle simmer. Cover and cook for 10–15 minutes until tender.
  2. Shred and season – Remove the chicken, shred with two forks, then transfer to an ovenproof dish. Add the Carnitas spice blend, base sauce and finishing sauce, and mix to coat.
  3. Bake – Bake the seasoned chicken in the over at 180 C for 15 minutes until hot and slightly caramelised at the edges.
  4. Serve – Warm your Soft Taco Wraps or Corn Tortillas. Fill with the chicken and top with onion, coriander and fresh lime. Serve immediately.
