Mexican Mashed Potato

These Mexican mashed potatoes are the perfect side dish. You can use it as an accompaniment for almost anything such as our Mexican Roast Chicken or Honey Glazed Pork Chop. The Mexican mash is also a key component in many of our dishes like our Mexican Fish Pie and the deliciously naughty Mashed Potato Bacon Bombs.

Ingredients
    • 500g / 1 lb 2 oz potatoes (something floury like Maris piper), peeled and cut into evenly sized chunks
    • 25g / 0.9.oz butter
    • 1 tablespoon Gran Luchito Chipotle Paste
    • Salt and freshly ground black pepper
    • 150g / 5 oz Cheddar cheese (for topping)

Method
  1. Put the potatoes in a pan of boiling salted water and boil for 15 minutes until tender. A sharp knife should slide easily into them.
  2. Drain and return to the saucepan.
  3. Add the butter, Gran Luchito chipotle paste and a pinch of salt and pepper.
  4. Mash thoroughly, making sure you get rid of all lumps.
  5. For a crispy top, top with cheese, place under the grill for 5 minutes until golden brown.
