This avocado recipe would go really nicely with our BBQ Corn recipe and some Chicken Taquitos or Pulled Pork Chimichanga.
We like using large raw prawns (e.g., tiger prawns or king prawns), peeled and deveined. Tail-on or tail-off is down to personal preference.
Yes definitely! Shrimp and prawns are often interchangeable in recipes. Just ensure they’re large enough to hold their shape during grilling.
Next time you fire up the grill just try out grilling avocados. Grilling an avocado infuses a smoky flavor into every bite, and is also a great way of speeding up the ripening process. It's a go-to move if they're a little underripe.
Make sure to:
1. Use ripe but firm avocados.
2. Cut the avocado in half and remove the pit.
3. Brush the flesh with olive oil and grill flesh-side down for 2–3 minutes over medium-high heat.
Also! Don’t scoop the flesh before grilling.
