For the Chicken Smash Tacos

500 g Chicken mince

1 sachet Mild Ancho BBQ Taco Seasoning

6–8 Soft Taco Wraps

150 g Shredded melting cheese (Cheddar or Mozzarella mix)

1/2 White onion, finely diced

1 small bunch Fresh coriander, finely chopped

1 Lime, cut into wedges
For the Herby Avocado Crema

1 Ripe avocado
-
2 tbsp crème fraîche or sour cream

1 small handful Fresh coriander
-
1 Lime, juiced

1/2 tsp Salt

Make the Avocado Crema: Add the avocado, creme fraiche or soured cream, fresh coriander, lime juice, and salt into a mini food processor or blender. Blitz until completely smooth and creamy. Set aside in a bowl for dipping.

Season the Chicken: In a mixing bowl, combine the chicken mince with the Mild Ancho BBQ Taco Seasoning. Mix thoroughly until the spices are evenly incorporated.

Smash the Tacos: Take a portion of the seasoned chicken mince and press a thin, even layer directly onto one side of a Soft Taco Wrap, spreading it right to the edges.

Sear & Crisp: Heat a dry skillet or flat-top pan over high heat until smoking. Place the taco wrap mince-side down into the hot pan. Press down firmly with a spatula and cook for 2–3 minutes until the chicken is deeply caramelised, crisp, and fully cooked.

Melt the Cheese: Flip the taco so the taco wrap is now on the pan. Immediately scatter a handful of grated cheese over the hot cooked chicken. Cook for another 1–2 minutes until the bottom of the tortilla is warm and crispy, and the cheese is fully melted.

Top & Serve: Remove the taco from the pan. Shower with finely diced white onion, fresh coriander, and a squeeze of fresh lime juice. Fold in half and dunk generously into the avocado crema.
