You can find a vegan or vegetarian version of just about any Mexican dish. We have options for vegan and vegetarian tacos, burritos, fajitas and enchiladas along with some practical advice for modifying recipes with ingredients such as coconut yoghurt in place of sour cream.

What meat substitutes can you use to make recipes vegan or vegetarian?

There are lots of options for making Mexican dishes vegan. We think substituting meaty mushrooms such as portobello and shiitake are a great option as are using ingredients such as jackfruit which can be pulled as in our Vegan Pulled Pork. Our Vegan Chilli Con Carne uses butternut squash which along with some chipotle paste and beans makes for a hearty chilli.
