Probably the most famous of Mexican recipes, good guacamole takes some serious beating. Inspired by a trip to Southern California, we decide to play with the ingredients and make a Mexican guacamole recipe that was a little bit more adventurous by using our tomatillo salsa.
The result is a tasty Mexican guacamole recipe that is full of fresh flavour and would be a perfect accompaniment to all our Mexican recipes.
How to make it
- Using a pestle and mortar, mash together 2 of the spring onions with a little coarse salt and half of the coriander.
- Remove the flesh from the avocados and mash in a bowl to a slightly lumpy consistency.
- Add the coriander/spring onion paste, the roughly chopped remaining spring onion and coriander, as well as the lime juice and Gran Luchito Tomatillo Salsa.
- Season to taste and serve with tortillas or as a side to almost anything.
