Probably the most famous of Mexican recipes, good guacamole takes some serious beating. Inspired by a trip to Southern California, we decide to play with the ingredients and make a guacamole recipe that was a little bit more adventurous by using our tomatillo salsa.

The result is a tasty guacamole recipe that is full of fresh flavour and would be a perfect accompaniment to all our Mexican recipes. 

Try serving this guacamole as a topping on our easy chicken fajitas, a topping on some beef nachos or dolloped into a chicken burrito.

How to make it

  1. Using a pestle and mortar, mash together 2 of the spring onions with a little coarse salt and half of the coriander.
  2. Remove the flesh from the avocados and mash in a bowl to a slightly lumpy consistency.
  3. Add the coriander/spring onion paste, the roughly chopped remaining spring onion and coriander, as well as the lime juice and Gran Luchito Tomatillo Salsa.
  4. Season to taste and serve with tortillas or as a side to almost anything.
