Goats Cheese and Tomato Salad

Get your hands on some beautiful ripe tomatoes and make yourself this awesome goat’s cheese and tomato salad with our Chipotle Honey in the dressing. The perfect side accompaniment for our Pork Meat Loaf on a hot sunny day with our Squid and Chorizo Seafood Bake. Make sure you have some crusty bread to hand to soak up those lovely juices. Dig in!

How to make it

  1. Whisk the chipotle chilli honey, white wine vinegar, olive oil and a pinch of salt and pepper together in a bowl.
  2. Combine the tomatoes with the dressing and leave for 30 minutes.
  3. Scoop off chunks of the goats’ cheese and scatter over tomatoes.
  4. Tear the basil leaves over the top and sprinkle with salt and pepper to taste.
