Whether it‘s Christmas or not, a chipotle glazed ham is always a winner. Slowly cooked then glazed in our smoky Gran Luchito Chipotle Honey, this is a must-try. The key here is to make sure you baste the ham as it roasts so the honey has a chance to really get involved. Getting it nice and crispy on the outside is an absolute must as well.

How to make it

  1. Put the gammon joint in a large saucepan and cover with water. Add the onion, bay leaves and peppercorns. Bring to the boil over a low heat, the cover and simmer for about 1½ hours.
  2. Remove the gammon from the pan and leave to cool.
  3. Preheat the oven to 200°C (400°F, Gas 6). Remove the skin from the ham with a sharp knife and throw away.
  4. Criss-cross the fat layer with a sharp knife.
  5. Roast for 20–25 minutes or until it is golden and crispy.
  6. Brush the chipotle honey all over the ham, then cook for another 15 minutes, basting with the honey that melts off every now and again.
  7. Leave to rest before carving.

Chef’s tip

If you’re short on time, you could always buy a pre-cooked ham and begin from step 4.

My go-to Christmas (or any other time!) ham recipe. I find boiling then baking the ham keeps it nice and juicy – nobody likes a dry ham! The Chipotle Chilli honey adds an amazing kick to it – that little bit different to your bog standard Xmas ham, that little bit more special! Sweet and warming sticky glaze – yum! My partner and I put chilli in most everything, so we were on to a winner here! Great to pick at fresh from the oven or as cold cuts, we love serving it with crusty bread and pickles!


No dry or bog standard ham in sight here! Great feedback, thank you Charley

Made this over Christmas, but made a glaze with your Chipotle paste and some black treacle rather than the honey and it was banging!

Had intended to use it with different meals, but it was so delicious we literally just kept putting it in some buttered rolls for about three days straight 🤣
