Calling all Vegetarians who love Mexican food! In this post we have a glorious selection of our top Vegetarian Mexican Recipes, (as well as some Vegan) for you. From classics (tacos and quesadillas) to tex-mex (burritos and fajitas) to comfort food (stew and con carne) we have it covered. We have recipes loaded with cheese and veggies of all sorts, avocado, beans, mushrooms, peppers, chickpeas and even jackfruit. Feast your eyes on these and happy cooking from us! 1. Roasted Cauliflower Tacos

 

Kicking off our favourite Vegetarian Mexican Recipes is this one. Cauliflower has become a hero vegetable in the last few years, whether it’s used to make pizza crust, fishless ceviche or a carbless version of rice! We think cauliflower is a pretty tasty vegetable and it makes a delicious filling in our Roasted Cauliflower Tacos recipe. For this recipe we rub the cauliflower with a full-flavoured paste made from white tahini, our bestselling Chipotle PasteGarlic and Guajillo Fajita & Taco Mix, garlic cloves and lemon juice.

2. Quick Empanadas

 

Next up are these Quick Empanadas with sweet potato and brie. To sum up, they are easy to make using pre-made shortcrust pastry sheets, full of flavour and spice and a total crowd pleaser. Firstly, pastry circles are filled with a tasty mixture of red pepper and onion, Chipotle Honey, mashed sweet potato, and Chipotle Paste. A piece of brie is then pushed into the filling and sealed by pressing the edges. Once baked the cheese will melt inside and combined with the delicious sweet potato and chipotle it’s a match made in heaven.

3. Black Bean Burrito

Our Black Bean Burrito is the perfect working from home Mexican lunch option. Quick to prepare, healthy as well as filling, and will keep you going until dinnertime. For this recipe we have incorporated our delicious Mexican Chipotle Rice recipe, but white rice would also do just fine. Next up our black Cantina Beans are the added protein, along with some fresh Red Pepper Salsa, creamy feta cheese, avocado, sour cream and some onions and cabbage. Yum!

4. Vegan Chilli Con Carne

 

Our Vegan Chilli Con Carne is the perfect meat-free Vegetarian Mexican Recipes batch cooking idea. In short, it’s a hearty and satisfying dish made with butternut squash, peppers, chickpeas and kidney beans! Secondly our smoky Chipotle Paste is added along with Fire Roasted Serrano Chillies for the ultimate kick. As a result, it’s a beautiful and colourful dish that everyone in the family will love. However, maybe do a separate little batch for the kids with just a small amount of Chipotle Paste (no chillies) to start them off.

Molletes Mexicanos are a very popular and wonderfully delicious breakfast, lunch or snack served in Mexico. We love molletes because they’re a full and nutritious meal for you that also happens to be super easy to make. Our recipe consists of some artisanal sourdough bread topped with Refried Beans and grated cheese. This is then placed under the grill or in the oven until the cheese melts and is lovely and gooey. A fresh homemade salsa of red onions, cherry tomatoes and a Chipotle Paste dressing is then served on top. A drizzle of creme fraiche and some chopped coriander finish it off to perfection.

6. Mushroom Molletes

Have you ever had Molletes? They’re a beloved Mexican open toastie normally enjoyed for brunch in Mexico. In our version of Mushroom Mollettes we’ve used pieces of crusty bread smeared with our delicious Cantina Beans. They are then covered with cheese and melted under the grill. Finally buttery girolle mushrooms mixed with our Smoky Chipotle Fajita and Taco Mix are served on top. These are traditionally served with a fresh pico de Gallo however we’ve taken it up a notch and included a spicy crema made using our Fire Roasted Serrano Chillies.

7. Spicy Vegan Jackfruit Burrito

Often burrito recipes focus on meat eaters which of course don’t satisfy vegetarians (or Vegans). So here we give you our Spicy Vegan Jackfruit Burrito recipe! We offer everything here that a meat burrito normally has, and make it look and taste just as good. If you’ve never tried jackfruit this is your chance to do so! It’s very easy to prepare, and combined with sauce and cooked in the oven, it resembles the texture of pulled pork! For this spicy burrito recipe we cover the jackfruit with Chipotle Paste and Chipotle Honey which creates the perfect marinade for our plant based filling. Once it comes out of the oven steaming hot, it’s shredded and tastes as good as any meat option you’ve tried!

8. Mexican Salad

We love a good salad at Gran Luchito and we really believe that they never have to be boring. This Mexican Salad recipe is proof of that and it can be served either as a main meal or as a side, with any protein you might be already cooking for your family. It’s perfect for those days when you feel like something a bit lighter, but still tasty. It’s fresh, colourful, satisfying and a tiny bit spicy (but just the right amount!). Our Chipotle Paste has many uses, but it’s also a great ingredient to make dressings, so for this recipe we’ve popped in a spoonful of this to make a quick and spicy dressing.

9. Mushroom Fajitas

Mushroom Sheet Pan Fajitas

Fajitas are quite easy to prepare already but this recipe makes them even more convenient to cook. All you do is place the veggies in a bowl and cover with Mild Fajita Cooking Sauce and Garlic & Guajillo Fajita & Taco Mix. This will bring loads of flavour to them. You then coat your mushrooms and peppers in the mixture and place them on a baking tray to let the oven do it’s magic. This recipe is non-spicy which makes it ideal to feed both little ones and grown ups.

10. Spicy Vegan Stew

There is nothing more comforting than a big bowl of a warm and hearty stew on a cold winter day. You’d normally associate a stew with meat, but our Spicy Vegan Stew is a plant based option that carries all the flavour without having to use any meat. It’s all about building flavours, using aromatics and good seasoning. Our Chipotle Paste is the star ingredient here.

11. Quick Queso Fundido with Roasted Chipotle Cauliflower

Queso fundido, if you aren’t already familiar, is a very popular snack in Mexico. What’s not to love about cheesy deliciousness melted in a skillet under the grill?! Often you will find queso recipes with chorizo as in our Chipotle Queso Fundido recipe. In this recipe we use roasted cauliflower flavoured with Gran Luchito Chipotle Honey glaze and a bit of Smoky Chipotle Fajita and Taco Mix. This gives heavenly roasted flavoured edges to the cauliflower and when served with the melted gruyere it’s just a match made in Mexican heaven. Serve with warm tortillas, guacamole and a bit of fresh salsa.

12. Mushroom Quesadillas

Next on the list, these Mushroom Quesadillas are a really tasty meat-free option. Mushrooms, Cantina Beans, red onions, spinach, mozzarella and Tomatillo Salsa are toasted up in Soft Taco Wraps. Such an easy dish to whip together, yet utterly satisfying and totally moreish. The ingredients go so well together you’ll just keep coming back for more!

Our Veggie Nachos need no introduction. The recipe combines corn, radishes, avocados, our Cantina Beans, loads of cheese and Jalapeño & Pineapple! Feel free to also add some homemade guacamole and dollops of Red Pepper Salsa. If you want to add some heat you could try using our Mango and Habanero Salsa or Serrano Green Chillies.

14. Black Bean Enchiladas

Here’s our delicious vegetarian Black Bean Enchilada recipe. It’s filled with red onion, black Cantina Beans, corn, spinach and a sauce made from tomatoes, aubergine and red peppers. The lovely rich enchilada vegetable sauce is hearty and warming for the winter, and our Chipotle Paste gives it that all important smoky Mexican flavour we love. Everything is assembled inside our Soft Taco Wraps and your homemade enchilada sauce is poured on top. Finally the dish is baked in the oven until bubbling, oozing and simply mouth-watering!

15. Halloumi Fajitas

Here we give you our delicious Halloumi Fajitas, a meat-free version of the classic dish. For this simple recipe we have tossed the Halloumi first with onions, peppers, olive oil and a sprinkling of our Chipotle Fajita & Taco Mix. It’s then baked in the oven, and stuffed into Soft Taco Wraps and topped with Serrano Green Chillies. With fresh lime and coriander added at the end, that’s all you need!

16. Vegetarian Enchiladas

Here is our scrumptious Vegetarian Enchiladas recipe! Either serve alone or as a separate smaller dish to serve with a meaty version. We substitute meat with our Refried Beans and lots of veggies in the form of different coloured peppers, sweetcorn and red onions. The flavour packs a punch by combining passata with our Chipotle Salsa and our Smoky Chipotle Fajita & Taco Mix.

17. Vegan Pulled Pork & Slaw

Vegan Pulled Pork & Slaw

If you can get hold of it, using jackfruit in place of pork to make a veggie version of pulled pork is well worth a try. Having said that, this applies even if you’re not vegetarian! The texture is slightly different, but the big smoky flavour will always be there using Gran Luchito. This recipe uses our Chipotle Paste and  Chipotle Ketchup, as well as a little of our Chipotle Mayo in the awesome coleslaw. You can pick up cans of young jackfruit in some supermarkets, Asian shops and online.

18. Vegetarian Quesadillas

Vegetarian Quesadilla’s are the ultimate meat-free snack, starter or light meal. Therefore, here we have used tomatoes, yellow peppers, red onion, Serrano Green Chillies and our smoky Refried Beans. Fresh coriander and grated manchego round them off perfectly! Finally, serve with guacamole and sour cream.

19. Vegetarian Fajitas

Last but not least, our Vegetarian Fajitas are a classic way of incorporating our Refried Beans into your Mexican recipes, or in this case Tex-Mex recipes. For this recipe we’ve filled our Soft Taco Wraps with refried beans as well as colourful peppers, mushrooms, red onions and courgettes seasoned with our Smoky Chipotle Fajita Mix.  Meanwhile, a side of guacamole and some fresh coriander finish this dish of perfectly.
