Firstly we’d like to kick off with our Beef Picadillo recipe. This is one of the easiest meals to prepare. It’s a secret weapon that many Mexican cooks use to feed their families during a busy week. Mainly consisting of beef mince fried with onions and garlic, it’s then cooked with diced vegetables, can be spicy or mild (as you prefer), normally served with Refried Beans, Mexican rice or warm Taco Wraps. on the side. At Luchito we like to use a bit of Garlic and Guajillo Fajita and Taco Mix to add more depth of flavour to our Picadillo.
2. Vegan Nachos
Can you use refried beans for Nachos? Hell yeah! Whether you are vegetarian or vegan, or simply like to switch things up sometimes and have meat-free days, these Vegan Nachos are for you. When it comes to making nachos it’s all about building up layers of flavour. As long as you introduce the elements in this recipe, we can guarantee that they will turn out amazing! For this recipe, we have loaded them with butternut squash, avocado, Refried Beans, Tomatillo Salsa, and lots more!
3. Roasted Cauliflower Tacos
Cauliflower has become a hero vegetable in the last few years, whether it is used to make pizza crust, fishless ceviche or a carbless version of rice! We think cauliflower is a pretty tasty vegetable and along with some refried beans it makes a delicious filling in our Roasted Cauliflower Tacos recipe. For this recipe we rub the cauliflower with a full-flavoured paste made from white tahini, our bestselling Chipotle Paste, Garlic and Guajillo Fajita & Taco Mix, garlic cloves and lemon juice.
4. Easy Turkey Leftover Burrito Recipe With Refried Beans
There’s nothing more satisfying than putting all of those leftovers from Christmas Day (or any turkey dish) together into one tasty meal. Somehow they manage to taste even better the day after! Just imagine adding all of those tempting bits into a Burrito Wrap, accompanied by our Refried Beans, Chipotle Mayo and Fire Roasted Serranos.
5. Easy Chicken Nachos
When it comes to Nachos it’s always handy to have a quick recipe for a movie night in, one that doesn’t involve hours of preparation and that you can put together in no time. Our Chicken Nachos is just that recipe! It is perfect for two people but can easily be increased depending on how many are watching that film together.
6. Tortilla Wrap Hack Luchito Style
Our Tortilla Wrap Hack is a really quick and fun way of using our Refried Beans. We think it’s a great and straightforward way to use our Burrito Wraps too! For this recipe, our chef Suzy has used the delicious combination of chorizo, potato and Chipotle Paste as the main filling, and incorporated our Refried Beans. 7. Mexican Molletes Recipe with Refried Beans
Molletes Mexicanos are a very popular and wonderfully delicious breakfast, lunch or snack served in Mexico. We love molletes because they’re a full and nutritious meal for you or your family that also happens to be super easy to make. Our recipe consists of some artisanal sourdough bread topped with Refried Beans and grated cheese. This is then placed under the grill or in the oven until the cheese melts and is lovely and gooey. A fresh homemade salsa of red onions, cherry tomatoes and a Chipotle Paste dressing is then served on top. A drizzle of creme fraiche and some chopped coriander finish it off to perfection.
8. Refried Bean Burrito
Its goes without saying that this burrito recipe uses refried beans. In fact its pretty difficult to make a burrito without refried beans, so we thought we’d make a vegetarian burrito with the old pinto beans at its core! Satisfying meat eaters alike, we have also added our Jalapeño & Pineapple for some crunchy, sweet heat.
9. Vegetarian Fajitas with Refried Beans
Vegetarian Fajitas are another classic way of using refried beans in Mexican recipes. For this recipe we have filled our soft Soft Taco wraps with refried beans as well as colourful peppers, mushrooms, red onions, and courgettes seasoned with our Smoky Chipotle Fajita Mix. A side of homemade guacamole and some fresh coriander finish this dish of perfectly.
10. Ultimate Chicken Nachos
The Ultimate Chicken Nachos. Of course you could have a side dish of refried beans for this, but we don’t waste any time, or washing up, and instead layer the beans, along with the other ingredients, right on top of the nachos! In this recipe we have cubes of chicken breast, dollops of guacamole, sour cream, the refried beans, our Chipotle Salsa, sliced red onion, coriander leaves, our Serranos and sliced radish.
11. Vegetarian Enchiladas With Refried Beans
Our Vegetarian Enchiladas recipe is great for non-meat-eaters who still want a hefty meal, as it’s loaded with veggies, refried beans and big flavours. Enchiladas would be a perfect dish for a family weekend lunch or dinner, when you have time to prepare it. This recipe uses our Smoky Chipotle Fajita & Taco Mix as well as Chipotle Salsa to pack a punch and enrich the sauce that gets poured all over before baking.
12. Chorizo Sandwich
Once you try this Chorizo Sandwich there is no going back! You’ll be craving it every lunchtime! For this one, we have spread a layer of refried beans on the bottom piece of toast, followed by a small handful of mozzarella. This is then grilled until oozing, and then topped with cooked chorizo and onion, Chipotle Salsa and mashed avocado with coriander and lime. Lunchtime perfection? YUM!
13. Vegan Burrito With Refried Beans
Here’s another delicious meat-free burrito recipe that needs refried beans. This time, as well as the colourful peppers, red onion and our Jalapeño and Pineapple, it also contains corn and jackfruit! Jackfruit, if you aren’t already familiar with it, is a great vegan meat substitute and works perfectly shredded into our Vegan Burrito recipe.
14. Easy Crispy Chicken Tacos
Easy Crispy Chicken Tacos is a very easy refried bean recipe to make and doesn’t take long. Our Hard Shell Tacos are spread with Refried Beans and filled with cooked chicken and a sprinkling of grated mozzarella. This is then put in the oven until the cheese has melted, leaving you with oozing yet crunchy tacos! Our Jalapeño & Pineapple tops it off perfectly.
15. Vegetarian Quesadilla
Another one of our favourite recipes with Refried Beans is the Vegetarian Quesadilla. You can make these as a snack, starter or as a main course. Or why not make a big batch of them and freeze a few, that way you can take a couple out of the freezer on the morning you’d like them as snacks later in the day. This recipe uses our Serrano Green Chillies, but for something milder, you could always replace that with Sliced Green Cactus.
16. Steak Burrito Bowl
The worthy Steak Burrito Bowl is a great lunchtime option or light evening meal. Prepare all of the ingredients into a big dish as shown here, with a side of soft Soft Taco Wraps, so that those eating can help themselves and fill their tacos as they please. We’ve incorporated steak, refried beans, shredded lettuce, cherry tomatoes, Jalapeño & Pineapple, sweetcorn, Sliced Cactus, fresh coriander and lime.
17. Pulled Pork Chimichanga
Last but by no means least, this pulled pork chimichaange recipe uses refried beans and is truly epic! For those of you with a deep fat fryer this will be an exciting option! A chimichanga is a burrito that has been deep fried and it is delicious! Here we have layered our Refried Beans with tender shredded pork and cheese on Burrito Wraps, wrap and then deep-fry them. They are served with spicy tomato sauce flavoured with our smoky Chipotle Paste, guacamole, sour cream and herby rice.
In conclusion, you can see that using Refried Beans is a great way of adding flavour, a nutritious as well as an authentic aspect to your chosen dish. A store cupboard essential we say!
