Recently we were challenged by our friends at Booths to develop some non-spicy Mexican recipes. Not all Mexican food is spicy and it can be easily customised, which makes it great for feeding a family. In this blog, we will share some advice on how to make mild Mexican dishes with some paired-back recipes and small tweaks to some of our most popular recipes. So here’s to a collection of recipes that is perfect for anyone who prefers their food full of flavour but not full of spice!
Beef Picadillo is easy to prepare and a secret weapon that many Mexican cooks use to feed their families during a busy week. It mainly consists of beef mince fried with onions and garlic, then cooked with diced vegetables. It can be spicy or mild (as you prefer), normally served with Refried Beans, Mexican rice or warm Soft Wheat Soft Taco Wraps on the side. In addition, at Luchito we like to use a bit of Garlic and Guajillo Fajita and Taco Mix to add more depth of flavour to our Picadillo.
Next on our list of non-spicy Mexican food we have quesadillas. What could be more kid-friendly than yummy, cheesy quesadillas?! With just a small tweak our Easy Chicken Quesadilla is a great recipe for the family. We recommend skipping adding the dollop of mayo and using our Red Pepper or Tomatillo salsa and sour cream as the dips in order to keep it mild.
Another alternative is to also leave out the chicken, and do a Cheese Quesadilla version. You could even sneak in some veg – sautéd sweet corn with diced peppers, mushrooms and courgette would work well. What could be milder (and more comforting) than delicious melty cheese and warm, toasty Burrito Wraps?
These Pork in Salsa Verde Tacos, inspired by the Mexican stews known as “Guisados” or “Guisos”, are made using pork shoulder cooked with fried onions, potatoes and seasoned with our Garlic & Guajillo Fajita and Taco Mix. They are then covered and simmered in our delicious Enchilada Cooking Sauce, finished with freshly chopped coriander and served with Luchito Soft Wheat Soft Taco Wraps. They are a favourite mild recipe of our family and friends, and we hope that your family will love them too!
These easy fish tacos are seasoned with our Garlic and Guajillo Taco Mix. We recommend you use cod to make the tacos but this taco recipe works really well with prawns, chicken or even pork too. Finishing the tacos with a dollop of our tomatillo salsa gives them a great fresh tasting flavour!
With simply grilled meat, tacos are also a great option for the family. In our Easy Steak Tacos recipe, we recommend skipping (or use sparingly) the Garlic and Guajillo Fajita & Taco Mix and pickled red onion. Let little ones get involved by offering a variety of toppings – shredded cheese, sour cream and mild Red Pepper or Tomatillo salsa are sure to be crowd-pleasers.
Similarly, in our Lighter Chicken Tacos recipe, we recommend skipping the Smoky Chipotle Fajita & Taco Mix and offering a variety of mild toppings. In terms of mild Mexican food, this one hits the jackpot!
Next on our list of mild Mexican recipes are Fajitas which are a great family-friendly option. In our Easy Chicken Fajitas recipe, we use our Mild Fajita Cooking Sauce which is made in Mexico using roasted red peppers blended with tomatoes, garlic and mild chillies and mild enough for the whole family to enjoy.
To make this a mild Mexican recipe, we recommend skipping or use sparingly the Smoky Chipotle Fajita & Taco Mix. Then offer a variety of mild toppings. Non spicy Mexican food at it’s finest!
Taquitos are delicious, crispy rolled tacos usually filled with shredded meat. In this recipe to make it quick and easy we use rotisserie chicken (or leftover roast chicken would work well). To make it mild, we recommend skipping the addition of the Chipotle Taco Mix. Serve with a selection of dips to bring some Mexican flavour such as Guacamole and mild Tomatillo Salsa.
Next on our list of non-spicy Mexican food is Cheesy Nachos which uses two ingredients – cheese and tortilla chips. All you have to do is follow steps 1-3 from our Easy Nachos recipe – seriously easy, but seriously delicious!
Finally on our roundup of non spicy Mexican food is our Easy Chicken Enchiladas recipe. This recipe uses our magnificently mild Enchilada Cooking Sauce for a brilliant shortcut to flavour. It has a very mild flavour of tomatillos, jalapeños, onion, garlich and coriander.
This recipe was inspired by a trip to Southern California where we found delicious guacamole with mild tomatillos and jalapeños. We decided to play with the ingredients and make a Mexican guacamole recipe with our Tomatillo Salsa. The result is a really tasty guacamole recipe that is full of fresh flavour and super easy to make. In addition, it only has a handful of ingredients! This guacamole recipe is not only great with our Lightly Salted Tortilla Chips but would also be a perfect accompaniment to any of the recipes in this blog.
Finally, this authentic Mexican rice recipe is a delight and can really add substance to other dishes. It will also soak up all of those wonderful flavours. Filled with sweetcorn and red pepper, you could also stir in some of our black Cantina Beans. Follow that by sprinkling with shredded cheese and topping with sour cream!
