There are plenty of Mexican food recipes that require a slew of ingredients and many hours of slow cooking, think Chicken Mole, which are absolutely unbelievable. But with the right ingredients and spices there are also lots of Mexican dishes that taste like they’ve taken hours in the kitchen to make. In this blog we will share our favourite Mexican food recipes from breakfast, snacks, sides and mains. Many of these recipes can be whipped up in 20 minutes so are perfect for a midweek meal but tasty enough for entertaining.
Chilaquiles (pronounced Chee-lay-KEE-lays) is one of our favourite Mexican food recipes made using corn tortillas cut into quarters which are lightly fried, and topped with red (tomatoes & chillies) or green (made with tomatillos) salsa. Shredded chicken and either fried or scrambled eggs are then usually added, followed by thin slices of raw onion, sour cream and queso fresca. This is one of the Mexican dishes that’s commonly served at breakfast time.
Another one of the more easy Mexican food recipes, and easily the most iconic, are Mexican tacos! Whatever you have in the fridge, armed with some taco seasoning and soft tacos, its pretty easy to whip up some epic Mexican tacos quickly. Some of our favourites include Prawn Tacos, Baja Fish Tacos, Chicken Tinga Tacos and our low carb meat-free vegan tacos.
Fajitas are similar to tacos, but with strips of grilled peppers, onions and either meat or veg wrapped up in warm tortillas. They are great for a crowd because they are customisable, and everyone can make theirs just as they want. Our fajita recipes include Chipotle Steak, Halloumi, Prawn, and Chicken.
How can you make a corn-on-the-cob better? Easy, smother it in Chipotle Chilli Mayo, sprinkle it with cheese, chilli and fresh coriander and squeeze fresh lime juice all over it! This is summer on a plate that you’ll find all over the streets of Mexico. Keep it on the cob for elotes and off the cob served in a cup with the same additions for esquites. Whichever you go for, you’re on to a winner!
You’ll find many different types of tostada around Mexico. Corn tortillas are fried in oil until crispy then piled high with amazing toppings. In coastal areas, it’s all about fish, which may be served raw as ceviche, mixed with lots of fresh lime juice, chilli and coriander. Elsewhere, frijoles refritos (refried beans), cheese and meat are popular too. The easiest (and most delicious) tostada to make is the Tuna Tostada.
Crispy corn tortillas spread with Chipotle Chilli Mayo, topped with tuna marinated in lime juice & soy, sprinkled with crispy deep-fried leeks and plenty of lime & coriander. It’s fusion food and it’s seriously amazing!
Another one of the super easy Mexican food recipes to make, and with crispy chorizo the taste is incredible! Perfect for dipping with our Lightly Salted Tortilla Chips for a film night or a buffet. No reason why you can’t play with the toppings either!
7. Queso Fundido
Next on our list of Mexican food recipes is queso fundido. This rich cheesy dish is perfect to dip into whilst watching a film, or works perfectly as a little starter. Queso fundido is a winner whenever you serve it. It’s traditionally served with soft corn tortillas, but we’ve subbed in a bag of our authentic Lightly Salted Tortilla Chips.
As long as you have good quality avocados, guacamole is amazing and so easy to make. Once you’ve mastered the basics you can play with the ingredients and make it a bit more adventurous. This tasty idea uses lovely chunks of juicy mango topped with delicious pomegranate seeds. It doesn’t get much more summery than this.
9. Street Corn
A Mexican food recipe plucked straight from the streets of Mexico City. Mexican sweet corn (or street corn as we like to call it) works brilliantly as a BBQ side dish. In the pictures below we made this Mexican street food as a starter served with our delicious Gran Luchito Lightly Salted Tortilla Chips.
10. Huevos Rancheros
Finally on our list of Mexican food recipes is the Gran Luchito take on huevos rancheros. We poached eggs in a slow-cooked rich and spicy tomato and red pepper sauce and served them with our soft flour tortillas. This is one of our favourite Mexican recipes for brunch when you’ve got the time to make it. It’s everything you need to set yourself up for a productive day.
