When you think of healthy food, Mexican may not be the first thing that pops into your head, but it can be filled with fresh veggies and be surprisingly good for you. Whether you’re doing low carb, low fat, or vegetarian, Gran Luchito’s range is a great way to add lots of flavour without the carbs, fat and calories. We’ve rounded up some of our favourite healthy Mexican recipes and ways to cut the carbs, fat and calories:
We love a good salad at Gran Luchito and we really believe that they never have to be boring. This Mexican Salad recipe is proof of that and it can be served either as a main meal or as a side, with any protein you might be already cooking. It’s perfect for those days when you feel like something a bit lighter, but still tasty. It’s fresh, colourful, satisfying and a tiny bit spicy (but just the right amount!). Our Chipotle Paste has many uses, but it’s also a great ingredient to make dressings, so for this recipe we’ve popped in a spoonful of this to make a quick and spicy dressing.
2. Taco Salad
First up for our Healthy Mexican Recipes list is our beautiful Taco Salad! Look no further if you’re looking for a healthy reset without depriving yourself of everything that’s tasty in life. Likewise if you are trying to eat a bit lighter but still have meals that feel satisfying and actually fill you up, then this is for you.
We think that traybakes or one-pot meals are the perfect answer to feed your loved ones, as they have all the flavour without all of the hassle. Besides, what’s not to love about an easy chicken traybake with a bit of Chipotle Paste and Chipotle Honey mixed in with delicious chicken juices and loads of healthy vegetables? A tasty, but feel good about yourself meal!
These mushroom sheet pan fajitas are a really tasty and healthy alternative to your normal fajitas. To keep them extra healthy and low carb serve the mushrooms on a plate with a side of Taco Salad.
Not only is this Mexican Black Bean recipe healthy it’s also super easy and delicious to make. The beans are high in fibre, low in fat and will provide you with lots of energy to keep you going throughout the day. Top with Avocado, sour cream and fresh coriander.
6. Pico De De Gallo
Another healthy Mexican recipe well worth mentioning is the classic Pico De Gallo. A simple and fresh-tasting salad that is pretty simple to make.
This Chipotle Steak Salad is great for a low carb lunch or dinner. It has plenty of fresh vegetables and oodles of flavour. Next on our list not Healthy Mexican recipes we have soup. Soups can be a very satisfying way to fill up that aren’t always laden with calories. If you want to cut the calories and/or carbs in this recipe, try substituting the tortilla chips for slices of radish which help to give it a bit of crunch. Lettuce wraps are a great alternative to tortillas when watching the carbs. Okay, we concede it’s lettuce and not soft, warm, delicious tortillas, but you still get loads of delicious flavour from the filling! We recommend using iceberg or round lettuce leaves for the wraps and topping with avocado, cheese and a dollop of your favourite Gran Luchito salsa. Our Honey and Chipotle Glazed Salmon is irresistible and with a tablespoon of our Chipotle Honey per portion, it adds so much flavour but only 50 calories/portion. Just don’t find yourself eating spoonfuls of honey as you make it (it happens, trust us that honey is pretty more-ish!).
