Is one of your New Year’s Resolutions to lose weight and/or eat better in 2020? Are you dreading the thought of endless meals of bland and boring steamed chicken and veggies? When you think of healthy food, Mexican may not be the first thing that pops into your head, but it can be surprisingly good for you. Whether you’re doing low carb, low fat, or vegetarian, Gran Luchito’s range is a great way to add lots of flavour without the carbs, fat and calories. We’ve rounded up some of our favourite healthy Mexican recipes and ways to cut the carbs, fat and calories:
1. Taco Salad
First up for our Healthy Mexican Recipes list is our beautiful Taco Salad! Look no further if you’re looking for a healthy reset without depriving yourself of everything that’s tasty in life. Likewise if you are trying to eat a bit lighter but still have meals that feel satisfying and actually fill you up, then this is for you.
Next up is the classic Chicken Stir Fry. Always a quick and easy mid week meal to knock up. It’s healthy and packed full of goodness. This one uses our Chipotle Paste for an extra added kick. For more stir frys try one with beef or salmon.
Our Roasted Pepper Salad with Halloumi is so delicious that it might become a regular! Red and yellow peppers, courgettes and coriander bring this colourful salad together along with the grilled halloumi. This time the Chipotle Paste is used inside a dressing that the salad is tossed with at the end. This dish can also be a tasty accompaniment to salmon or chicken.
Another healthy Mexican recipe well worth mentioning is these Zesty Prawn Tacos. Fresh, zingy and bold, they only take 10 mins to knock up, and our Habanero & Lime Fajita and Taco Mix marinaded with prawns is pure perfection! Try these other Taco recipes for further inspiration!
This Chipotle Steak Salad is great for a low carb lunch or dinner. It has plenty of fresh vegetables and oodles of flavour. Cucumber, avocado, tomato & lettuce with a zingy dressing and steak marinated in our Chipotle Paste. It will definitely wake up your taste buds! Check out our other salad recipes.
6. Vegan Tacos
Inspired by a recipe from Deliciously Ella, this recipe subs in lettuce leaves for tortillas as the taco base. They are filled with butternut squash & sweet potato. Then they are topped with charred corn, guacamole and cashew nut cream made with our Chipotle Paste. Check out our other Vegan and Vegetarian recipes.
Fajitas packed with veg are another healthy Mexican recipe we love. Our range of Fajita and Taco Mixes are a brilliant way to add instant flavour to the meat and veg without the calories. And our salsas with fewer than 50 calories per 100g have no added sugar and are a delicious and low-fat way to dress your fajitas. If you’re going low carb, you will want to leave out the tortillas, but lettuce wraps or served on a bed of greens are great alternatives. Next on our list not Healthy Mexican recipes we have soup. Soups can be a very satisfying way to fill up that aren’t always laden with calories. If you want to cut the calories and/or carbs in this recipe, try substituting the tortilla chips for slices of radish which help to give it a bit of crunch. Lettuce wraps are a great alternative to tortillas when watching the carbs. Okay, we concede it’s lettuce and not soft, warm, delicious tortillas, but you still get loads of delicious flavour from the filling! We recommend using iceberg or round lettuce leaves for the wraps and topping with avocado, cheese and a dollop of your favourite Gran Luchito salsa. Our Honey and Chipotle Glazed Salmon is irresistible and with a tablespoon of our Chipotle Honey per portion, it adds so much flavour but only 50 calories/portion. Just don’t find yourself eating spoonfuls of honey as you make it (it happens, trust us that honey is pretty more-ish!).
