1. Brussel Sprout and Chorizo Quesadilla
Our Brussel Sprout and Chorizo Quesadilla is so delicious it can even transform the biggest sprout hater! No wonder quesadillas are so popular these days. Besides being delicious, they are easy to prepare and satisfying for adults as well as little ones. They are very versatile as you can have a bit of fun and add a variety of fillings suitable for vegetarians as well as meat eaters. For this recipe we have seasoned chorizo, onions and sliced brussel sprouts with our Smoky Chipotle Fajita and Taco Mix, Tomatillo Salsa and finish them with a bit of butter and freshly chopped coriander.
2. Picadillo
Beef Picadillo has to be one of the easiest meals to prepare. It is a secret weapon that many Mexican cooks use to feed their families during a busy week. It mainly consists of beef mince fried with onions and garlic, then cooked with diced vegetables, can be spicy or mild (as you prefer), normally served with refried beans, Mexican rice or warm Soft Wheat Soft Taco Wraps. on the side. At Luchito we like to use a bit of Garlic and Guajillo Fajita and Taco Mix to add more depth of flavour to our Picadillo.
3. Easy Chilli Con Carne Recipe
The great thing about this easy chilli con carne recipe is that it doesn’t take hours to make and is easy enough to make for a quick midweek meal. There is nothing better or more comforting than this! If we had to choose one dish for our Chipotle Paste it would have to be a chilli con carne. A dollop of this paste adds a smoky depth of flavour that works perfectly and makes it taste like you’ve been simmering the chilli for ages. How to make chilli con carne epic? 4. Vegan Chilli Con Carne
This vegan chilli con carne is perfect for a healthy, meat-free meal. Having said that, if you’re a meat-eater, the roasted butternut squash and smoky flavour from the chipotle paste means that you won’t miss the taste of meat whatsoever in this vegan dish, we promise. 5. Chilli Con Carne Empanadas
These chilli con carne empanadas are delicious crumbly pastry stuffed full of tasty Chilli Con Carne made with our Chipotle Paste. They are a great way to use up leftover chilli con carne and take your chilli to a picnic, or just an interesting and original way to eat chilli at home. Try serving these chilli con carne empanadas as a drinks party snack alongside our deep fried chicken wings and our mini Mexican scotch eggs.
6. Authentic Chipotle Chicken Stew
Who doesn’t feel like a warming bowl of hot stew during this cold weather! It’s one of the most classic comfort food recipes, and we’ve given it a Mexican twist of course! Ours contains a smoky chipotle sauce and our Sliced Mexican Green Cactus. Either have it on it’s own in a bowl with a dollop of sour cream, or team it with Mexican Mashed Potato and our Lightly Salted Tortilla Chips as the perfect dippers for that yummy chipotle goodness.
7. Mexican Shepherd’s Pie
Our Mexican Shepherd’s Pie is pure comfort food, and one of our most popular Mexican Fusion Recipes. The recipe was one of the first recipes that we made using our Chipotle Paste and hundreds of recipes later, it’s honestly still one of our favs. The simplicity of adding our Chipotle Paste to the mince and our Chipotle Mayo to the mash really transforms the dish and takes the pie to another level. Why not batch cook this, and make a couple of these pies – you can freeze one for a later date!
8. Chipotle Bangers and Mash
Another classic comfort food recipe, given a Mexican twist! For this one we have added our Gran Luchito Chipotle Mayo into the mashed potatoes so that you get that familiar smoky kick! Combine with your favourite sausages, and some delicious onion gravy, and you are good to go. For the gravy we have added Worcestershire sauce and fresh thyme leaves. Just make sure it’s piping hot before pouring over your bangers and mash!
9. Creamy Coriander Chicken Recipe
Such a great comfort food recipe, this indulgent creamy coriander chicken dish combines coriander with oregano, onions, garlic and sour cream to make a delicious sauce. The addition of Sliced Cactus in this dish adds a nice twist, as well as some kick in the form of our Smoky Chipotle Fajita and Taco Mix. Such an easy, hearty and warming recipe, and one you can eat again and again. Guaranteed to become a family favourite in your home!
10. Enchilada Lasagne With Beef Short Ribs
Finally, we’ve added this recipe because enchiladas really are a bit of a show stopper dish. In addition, this particular recipe is pure decadence. Something to really get stuck into! For the recipe we have use beef short ribs with the bone-in, and pan-fried them with the vegetables and Chipotle Paste. The smoky black Cantina Beans and red wine is then added and it’s all then slow cooked in the oven for a few hours. When it comes out the smell is absolutely divine, and the meat should fall off the bones. You then have fun assembling the enchiladas in our Street Taco wraps, and pouring over your homemade enchilada sauce. Finally, the dish is baked in the oven until bubbling, oozing and simply mouth-watering!
