Zesty Prawn Stir Fry

Using our Gran Luchito Chipotle Paste this Zesty Prawn Stir Fry recipe brings together Mexican smoked chilli with classic Southeast Asian flavours and they work wonderfully well.

How to make it

  1. Put the prawns into a mixing bowl.
  2. In a food processor, whizz up the Gran Luchito Chipotle Paste, coriander stalks, garlic cloves, sugar and fish sauce into a paste. Empty on to prawns and mix well.
  3. Fill a saucepan with cold water and heat. Once boiling add the noodles.
  4. Heat a wok with 1tbsp groundnut oil and add the chopped spring onion and grated ginger. Fry for about a minute.
  5. Add the beansprouts and fry until they begin to wilt, followed by the crushed peanuts, soy sauce, and a good pinch of black pepper. Empty wok contents into a bowl, clean and return to heat.
  6. Add another 1tbsp of groundnut oil. Once hot, use a slotted spoon to add the prawns (leaving the marinade in the bowl for now) to the wok and toss in the hot oil.
  7. After a minute or two (once the prawns have turned pink), turn down the heat and add the marinade and cook for another 2 minutes.
  8. Add the other vegetables (beansprouts etc) and half of the chopped coriander leaves along with the noodles. Mix up well and serve immediately.
  9. Sprinkle each bowl/plate with more chopped coriander and serve each with a thin slice of lime to squeeze over.
