The Ultimate Guacamole

Probably the most famous of Mexican recipes, a good guacamole takes some serious beating. Inspired by a trip to Southern California, we decide to play with the ingredients and make a guacamole recipe that was little bit more adventurous.

The result, a tasty guacamole recipe that uses lovely chunks of juicy mango and is topped with delicious pomegranate seeds. Of course we  also added some of our Gran Luchito Chipotle Paste into the mix. This gave the guac a nice subtly smoky bite.
It doesn’t get much more summery than this.

How to make it

  1. Cut the avocados in half lengthways. Remove the stone and scoop out the flesh into a bowl.
  2. Squeeze the lime juice over the avocado as soon as possible to stop it oxidising and turning brown.
  3. Use a fork to smash the avocado to your desired consistency (we like it a little chunky).
  4. Roughly chop the tomato and coriander and stir into the avocado, along with Gran Luchito Chipotle Paste and salt & pepper.
  5. Dice the mango and remove the seeds from the pomegranate and scatter both on top.
  6. Serve with tortilla chips as a snack or starter, or alongside your main meal.
