Steak Salad

This steak salad is great for a low carb lunch or dinner with plenty of fresh vegetables and oodles of flavour. Cucumber, avocado, tomato & lettuce with a zingy dressing and chipotle marinated steak. What more do you need?

How to make it

 

  1. Rub the Gran Luchito Chipotle Paste into the steak all over and leave for 15 mins.
  2. In a bowl, mix together the fish sauce, sesame oil, lime juice and lemon grass.
  3. Add the cucumber and sing onion and leave aside.
  4. Meanwhile, separate all the lettuce leaves and slice the bigger leaves into bitesized chunks. Slice the avocado thinly. Cut tomatoes into quarters.
  5. Heat a griddle pan until smoking hot.
  6. Add the steak and leave without moving for 2 minutes. Flip and repeat.
  7. Leave to rest for 5 minutes before slicing thinly.
  8. Meanwhile, add the lettuce, tomato, avocado and roughly chopped herbs to the dressing and mix well.
  9. Crush the peanuts.
  10. Place dressed salad in a bowl and top with steak and sprinkle with crushed peanuts.
