Mexican Mashed Potato

This is not just the perfect side dish for bangers, you can use it as a side to almost anything from grilled or roast meats to cold meat and pickles. Plus you can use it in a whole host of other tasty things like our Fish Pie or Mashed Potato Bacon Bombs.

How to make it


  1. Put the potatoes in a pan of boiling salted water and boil for 15 minutes until tender. A sharp knife should slideeasily into them.
  2. Drain and return to the saucepan.
  3. Add the butter, chipotle paste and a pinch of salt and pepper.
  4. Mash thoroughly, making sure you get rid of all lumps.
  5. For a crispy top, top with cheese, place under the grill for 5 minutes until golden brown.
