Easy Chicken Fajitas

This is a really great way to use this mild and tangy tomatillo salsa. Simply fry up some chicken breast slices and pour in the salsa to warm through then serve with soft tortillas and and other sides you fancy.

This tomatillo salsa works amazingly well stirred through guacamole too.

How to make it

  1. Get a frying pan hot.
  2. Slice the chicken breast and yellow pepper, place in a bowl and add a drizzle of olive oil and a good pinch of salt and pepper. Mix well.
  3. When the pan is hot, add the chicken and peppers and flash fry until chicken is brown all over, stirring now and again. This should only take 3 or 4 minutes. Remove from heat and leave for 5 minutes.
  4. Place back onto a low heat and add the Gran Luchito Tomatillo Salsa and a handful of roughly chopped coriander and stir well.
  5. Bring the salsa to a simmer then serve with warm tortillas.
