Crispy Smashed Potatoes

Having seen a great looking recipe for crispy salt & vinegar smashed potatoes recently, we thought we’d give them a go using our Gran Luchito Chipotle Paste. For something so easy, these were really very tasty. You can play with the ingredients too, adding different spices or herbs. We reckon that these would be pretty epic served with a Gran Luchito marinated steak.

How to make it

  1. Preheat your oven to 200C.
  2. If dirty, wash the potatoes well. Put them in a large saucepan along with the white wine vinegar and salt. Add enough cold water to cover the potatoes.
  3. Bring to the boil then simmer for 15-20 mins (or until the potatoes are cooked).
  4. Drain the cooked potatoes and return to the saucepan. Mix the Gran Luchito Chipotle Paste with the olive oil, pour over the potatoes and coat well.
  5. Transfer the potatoes to a foil-lined baking tray.
  6. Press each potato with the underside of a glass/mug so they are approximately 2cm thick.
  7. Cook in the oven for about 20mins, or until golden and crispy. Flip each potato over and crisp up opposite side.
  8. When ready, sprinkle with salt & pepper before serving.
  9. These would be delicious dipped in Gran Luchito Chipotle Mayo!
